Are DareBuilt Oven Steels ™ pre-seasoned?
Yes, your DareBuilt Baking Oven Steel ™ comes pre-seasoned with a coat of refined Canola oil. It’s ready to use right out of the box but it needs to be heat treated for the seasoning process to be complete. Full Instructions are included and the process is super simple and there is a link on our site to a video walk through. The steel will get better with use over time and it will darken and develop a nonstick patina—just like cast iron pans do.
Why did my food stick to the steel?
Your steel will need several heating and cooling cycles or seasoning cycles to really become non stick. As the steel gets used it will become darker and almost shinny black with use. Make sure that your steel is hot enough. The key to a nonstick surface is heat. Preheat your Baking Oven Steel for at least 45–60 minutes at 500°F. If you have a convection setting on your oven mode use it this mode for more even heat distribution. Also you may use parchment paper for the first few weeks until your steel is well seasoned,.
How should I clean it?
Firstly, let the steel cool completely, then you can place a damp towel on the steel to soften up any hard sticky parts. Use a plastic spatula or wooden spoon to scrap off any stubborn residue. Dry completely and wipe or spray with your favorite seasoning oil. We do not recommend stone bricks made of porous stones as these are known to harbour dangerous bacteria that can be transferred to your steel.
Can I store the steel inside my oven?
Yes! Most customers leave their Baking Oven Steel in the oven and never remove it, it makes all your oven use better as it acts as a massive heat storage system for your oven. Your Baking Oven Steel will regulate your oven’s temperature and reduce temperature fluctuations making all your baking and roasting better!
Can I place it on my BBQ?
Yes, Baking Oven Steel works beautifully on gas grills, but you have to be VERY careful on open flame and charcoal grills! Open flame and charcoal grills may get too hot and exceed the smoke point of your seasoning oil resulting in burning off your well achieved seasoning layer- THIS IS BAD! Open fire can reach 2000 degrees fahrenheit and at that temperature your will will get damaged.
Is Baking Steel food-safe?
Yes. All DareBuilt Baking Oven Steel ™ are made from the highest quality W44- (a36 USA Equivalent) , low-carbon, Canadian -made steel with no coatings or chemicals. It’s the same type of steel used in food service griddles and restaurant kitchens. It contains no nickel or chromium, which are commonly found in stainless steel.
What size and dimension do I order?
We offer several sizes. Our most popular models are as follows - 14 x 22 x 1/4” for sourdough open baking, our 16 x 14 x ¼ inches for casual bakers and pizza night and 14 x 16 x3/8” Deluxe for pizza professionals.
We make many other sizes- Please make sure that the steel will fit into your oven! This can be done by making a cardboard template and test fitting the steel on your oven racks. Make sure that there is at least 1” of room all around your steel for the circulation of air and moisture inside the oven for perfect baking results!
Note- The steel is heavy! Generally speaking our steels weigh roughly anywhere from 10 KG to 15 KG depending on the steel you select. They may not be ideal of elderly people so please consider this if you are thinking of gifting the steel.
How do I store it?
You may elect to store your steel in a cabinet but we recommend you leave it in your oven all the time. If placed on a shelf make sure the steel lays flat so that it does not warp. Simply ensure that the steel is dry and has a light coating of oil to prevent any rust.
Why are there scratches or blemishes on my Baking Oven steel ™ ?
Scratches or marks are often from our seasoning process and simply the nature of the raw material we source and in no way damage. Each steel is uniquely cut from one large slab of steel on our laser. Slight imperfections are like Beauty Marks and are totally normal and in no way will affect performance.
